A classic burger dressed like it ordered a martini. This one leans into steakhouse logic: well-seasoned beef, sharp cheddar, buttery balsamic onions, and a Dijonnaise that pulls everything together. No gimmicks – except the magic coming from our special salt.
Ingredients
The Burgers
- ½ lb ground beef (80/20)
- Magic Salt, generously applied – here’s the special part
Dijonnaise
- ½ cup mayonnaise
- 2 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- Magic Salt, to taste
Balsamic Onions
- Red onions, sliced ⅓-inch thick
- ½ cup balsamic vinegar
- 4 oz unsalted butter, cubed
- Magic Salt, to taste
For Assembly
- Aged cheddar cheese
- Brioche buns, toasted
Instructions
- Shape the Patties
- Gently form the beef into ¾–1-inch-thick patties.
- Don’t overwork them – loose hands make better burgers.
- Season generously with Magic Salt just before cooking.
- Stir the Dijonnaise
- In a small bowl, whisk together the mayonnaise, Dijon mustard, Worcestershire sauce, and Magic Salt until smooth.
- Set aside, since this gets better as it sits.
- Where the Magic Happens
- Heat a cast-iron skillet or grill over medium-high heat.
- Add the patties and cook:
- – 3–4 minutes per side for medium-rare
- – 4–5 minutes per side for medium
- During the final minute, add aged cheddar and cover briefly to melt.
- Make the Balsamic Onions
- Heat a pan over medium-high with just enough oil to coat the surface.
- Add the onions in a single layer and let them caramelize deeply on one side.
- Flip and repeat on the other side.
- Lower heat to medium and add the balsamic vinegar; let it reduce by half.
- Reduce heat to low and add the butter a few cubes at a time, gently swirling the pan to emulsify.
- Season with Magic Salt and spoon the glossy glaze over the onions.
- Toast the Buns
- Toast brioche buns until golden and lightly crisped.
- Assemble with Intention
- Spread Dijonnaise on both sides of the bun.
- Add the burger, followed by balsamic onions.
- Close, press gently, and serve immediately.
